Will's Rice Pudding - wonderful stuff!

I just wanted say how much I have appreciated my membership to this site and news letter. I have been a member for about 1 1/2 years now but have not contributed very much to this board. Part of the reason is, I'm embarrassed to say, I keep losing my login password. It's all well and good to get a new one but it is another thing remembering where I put it! I never claimed to be the sharpest pencil in the box!

Now to my point, I have either come down with a flu or having a reaction to some new medication...I am experiencing horrible bloating and diarrhoea. For the past year, I have been extremely lucky and have had few attacks of IBS. Yesterday, after experiencing a very rough few days, I got out the recipe for Will's Rice Pudding and made up a batch. I am pleased to say that today I am (so far) feeling better and haven't had to rush off to the bathroom. Does anyone have any suggestions as to what I should consider having for dinner tonight or would it be wise to stick with the rice pudding all day? I'm going to have to start eating proper meals sometime. We really like the Turkey and Roasted Red Pepper Pasta recipe that I got off this site. Do you think I will be pushing things too much to have this tonight? I finally feel like eating after three days of not. Thanks!

P.S. Where may I find the recipe for the Party Strata?

Here ya go: Party Strata

However, I wouldn't have it until you're stable! It has BROCCOLI in it, one of the toughest veggies to digest. It also has turkey ham in it, which most likely contains dark poultry meat. (However, I gotta tell ya, it's incredible -- I've made it a hundred times for lots of parties, and it always goes over big.)

As regards your turkey dish with the red peppers (boy that sounds good!), I don't know if those peppers would go down real well for you right now. Can you pick out the turkey and just eat it by itself with some French bread or sourdough?

I made Will's rice pudding once; you're right -- it IS great. Hmmm.... I may just have to make some more...

Thanks very much for your response. Your recipe for the Strata sounds really great. I noticed in that you use egg beaters to replace the eggs. Are egg beaters made with whole eggs or just the whites?

Bev has a great idea for you there. If you're looking for something simpler until your tummy is stabalized, though, you should check out the recipe index. There are some great baked chicken recipes that are really easy to tolerate. A couple of my favorites are Oriental Baked Chicken and Asian Baked Chicken with Vinegar Sauce. Just have the chicken with a baked potato or some cooked carrots (both extremely tolerable veggies) and some crusty bread or white rice and you have a meal! That's one of my favorite stand-by meals when my tummy isn't at its best. I hope you start feeling more like yourself soon!

Hi Mauwjauw,

Egg Beaters contain real eggs -- but 99% are the egg whites. 0g. fat and 0 cholesterol -- that's ZERO. They also make an "All-Whites" version, but it's not like eggs at all; it's clear and kinda runny. Great for recipes, but I wouldn't wanna try to scramble 'em! Ew.
