What is your families FAVORITE IBS safe recipe???

Hello everyone! Am trying very hard to make a lot of recipes from the boards to "try out" on the family. (Husband, 9 year old son, 5 year old daughter).......I want to be able to keep a log of all the recipes we like in my "recipe book" in the kitchen, and in the computer. WE meet up with 4 other families (very close friends) for a potluck each month and since my "diet" has changed in this past month or so since finding this awesome website my friends want me to email them my "new tried and true" recipes each month so they can keep an updated list in their computer so anytime we get together they will all make something off my recipe list and I can eat everything! WE went to a potluck at our church yesterday and 20 families came with food, (the Sunday School class we are in was hosting some Missionaries in town).... anyway, I left in tears because LITERALLY I could eat NOTHING there. I think for the first time my family saw the pain my heart was in, and they all understood FINALLY just how serious I am about not living in pain anymore! They all made me lunch when we got home! I was starving! So I am askig all of you who have time to link me and everyone else, or write in your favoite recipe and my family and I will try your favorites out. Maybe this can help a lot of people. I know I cannot eat tomatoes cooked or raw, or bell peppers. And then the usual stuff of IBS STAYAWAYS! Thank you all so much for all the information! I bet this thread could be BIG! ha

Pumkin Cheesecake
I was skeptical about how this would taste as a replacement for my favorite food (the "bad" cheesecake). I should have just trusted everyone.... My family loved it, too. I had to make a second one 2 days later 'cause they all snarfed up the first one so quickly I barely got any! It tastes like the perfect dream blend of my TWO favorite deserts of all time: cheesecake and pumpkin pie. OOOH! Now I want some!
I'll getcha some more later (when I get home). I depend heavily on rice noodles and rice-- hope you don't mind that kind of thing. I'll definitely get you my staple self-created rice noodle recipe. It's a combination of a ton of other recipes I saw. Everyone likes it and it's easy!

Tanya, when I first read your post I thought, "There are so many great recipes I'll never be able to list them all!" Then I remembered that over my school break a couple of weeks ago I decided to make a web page of IBS safe recipes I've tried and enjoyed. I was waiting for the right time to unveil it here, and I think this is that time! So here are my tried and true favorites:

Well, before I got to the end of your post, my crock pot spaghetti sauce came to mind immediately. However, since you can't tolerate tomato, I'd have to say either Kree's mac & cheese or my "Party Strata."
Hubby's fave is the spaghetti sauce and lentil soup with sausage (but both dishes have tomatoes in them). He also likes lemon chicken or spinach turkey loaf. The turkey loaf has a little ketchup in the piquant sauce, but you can eliminate the sauce completely if you wish.
However, if it's a dish that you want to take to a "pot luck" or Sunday social, then the "Party Strata" wins, hands down.
It'll be interesting to read others' answers in this thread.

Did the pumpkin cheesecake come out like pumpkin pie (e.g., same consistency, etc.)?

Hmm... It was pretty dang close to cheesecake consistency, actually. Nice and smooth... but thick like that. I think pumpkin pie is a little less dense or something...
The spices were like a pumpkin pie lite! (But I like a SPICY pumpkin pie) That can be adjusted easily by tinkering with the amounts of spices. I didn't tinker at all when I made the 2nd one, that's how happy I was with the first go-around.
Since the crust was made with crushed up gingersnaps, it was missing that graham-crackery goodness, which is just fine in this instance.
When we served it the first time, we drizzled a little maple syrup on the plate (like they would in a frous-frous restaurant!). Yum!
It wasn't tangy like a cheesecake can be. It was smooth that way, too.
All in all, a smooooooooth dessert!
NOTE: It's MUCH better the second day. A lot of cheesecakes are, too, and the recipe will say "make a day ahead." That's what I recommend here. (Not that it's not excellent the first day, but YOWZA! It's even better after 24 hours!)

I know how you feel about finding absolutely NOTHING to eat at potlucks and how depressing that can be. I'm usually lucky if I can find a piece of plain meat and bread. People all piling up their plates and looking at mine with THAT LOOK. I never knew what to bring myself for the group as the things I eat are not party foods and non appetizing. Now that I've received Heather's book I can't wait to try some of them and bring not only something I can eat that is tasty but something others will like and maybe even ask me for my IBS safe recipe! . I just hope I can handle the soy as soy sauce and a few other soy products I've had "get me".
