Turkey Pasta Salad w/ Spinach sauce

YUM! YUM!

2 Packages spiral macaroni (5 oz ea)
3 cups cooked turkey breast or chicken cubed
1 tbsp olive oil or canola oil
1tsp vinegar
1 tbsp pine nuts or slivered almonds

Prepare Spinach sauce while cooking macaroni.
Cook macaroni as directed on pkgs. Drain and rinse under cold water and drain. Toss macaroni with 1/2 cup of the spinach sauce. Toss turkey or chicken with oil,and vinegar;spoon into center of macaroni mixture. Sprinkle with nuts. serve with remaining spinach sauce. Make 1 1/2 cup servings for 6.

Spinach sauce

4 cups spinach leaves
1 cup parsley sprigs
1/4 cup lemon juice
3 cloves garlic cut into halves
1/2 cup grated soy parmesan cheese
2 tbsp olive or canola oil
1 tsp dried basil leaves
1/2 tsp pepper

Place half of each spinach/parsley/lemon juice and garlic in blender. Cover and blend on medium speed, stopping blender frequently to scrape sides, until spinach leaves are finely chopped, about 3 minutes. Repeat with remaining spinach, parsley, lemon juice, and garlic. Place all mixture in blender and add cheese, oil, basil, and pepper. Cover and blend on medium stopping frequently to scrape sides, until mixture is smooth, about 2 minutes.

Hope you all enjoy this serve with warm slice of french bread.

That looks wonderful! I've been avoiding spinach because it bothered me for a while, but this looks like a good way to start working it back in. Thanks for sharing!

Yeah know what you mean. A few months back had some spinach and well my b/m was quite fragrant. I like this recipe and I suggest eating it early in the evening as it can be heavy or eat a light portion if a late dinner. It makes a great leftover for lunch time at work or school.
