It's more likely that butterball turkey than the apples - those things can be quite high in fat. Also some people have problems with corn. And you mentioned 3 spoonfuls of applesauce before - was that ALL the soluble fiber you had as a base for that meal? If so, that's REALLY not enough.

Unless you are very handy with a knife, you really need to use an apple corer, which you insert into the core, twist round and pull out. Even so, you will likely leave some of the core behind, depending on the type of apple ...

But what you did would work fine if you covered the apple with some foil. Or you could put the pieces in a small ovenproof dish with a lid, you could add a little honey/water/lemon juice - to taste - to stop it drying out. Bonus is it will cook a lot quicker than the whole apple, but downside is you can't stuff the empty core with something delicious. Just make sure you don't eat the skin!
