Here's a recipe that I've made a LOT -- whenever I need to take something to a pot luck -- because it's not only delicious but it looks real pretty too and goes a long way; it serves a LOT of people! However, the recipe calls for HAM, and I've never made it without. Turkey ham is available in some stores. (NOTE: This dish MUST be made THE DAY BEFORE you wish to serve it; it has to sit overnight -- or at least 6 hours before baking!)

PARTY STRATA

18 slices white bread
1-1/2 pounds mild grated soy cheddar
4 cups minced ham (approximately one small canned ham)
6 cups chopped fresh broccoli
6 beaten eggs (use Egg Beaters)
3-1/2 cup soy milk
2 tablespoons instant minced onion
1/2 teaspoon salt
1/4 teaspoon dry mustard

With a donut cutter, cut out 18 "donuts" from centers of all the bread slices; set aside, separating "donuts" from the donut holes. Fit remnants of the bread (crusts and all) into the bottom of a large (15x10x2") greased casserole in a single layer; it'll be a nice tight fit. Sprinkle half the cheese in a layer over the bread, half the broccoli over the cheese, then half the ham. Repeat the layers one more time, gently packing it all down. It'll be quite full.

Place "donuts" in attractive pattern on top, fitting the "donut holes" in between rounds of "donuts." Combine remaining ingredients; carefully pour over casserole. Cover and REFRIGERATE OVERNIGHT.

Bake uncovered in 325-degree oven one hour. Let stand AT LEAST 10 minutes before cutting into squares.

This dish is also very good served cold.

and I should be fine. Does anyone know if Turkey Spam is IBS safe? I'll have to do some research on that. Or like you said the turkey ham or like smoked turkey breast from Jennie-O? (drool rollin down my chin)

I've never seen soy swiss? Is there a brand that I can look for? Heather you are near me...where have you found it?

Thanks Kree & Bevrs these look yummy! I'll give them a test this weekend and see how they turn out.

Hmm... I have found it around here, but I can't remember the brand. It wasn't shredded, it was sliced and I just ripped it into shreds myself. Hopefully Heather can help you out with the brands you have there!

I wonder if the soy swiss tastes like real swiss. Have you tried it? I have been craving a ham and swiss cheese sandwich lately and I know you can get fake ham. I wonder if that is even good.

Heidi, the soy swiss works great in recipes, but I must admit it's just not the same on sandwiches. That's just my opinion, though, so I'd highly recommend giving it a try! I just haven't found any sliced soy cheeses I like enough to slap on a sandwich yet.

I'm with Kree on this one. All the sliced soy cheeses taste like rubber. The shredded mozzarella isn't bad and makes a good pizza, and the bulk cheddar isn't bad with Kree's mac & cheese, but hold the sliced stuff. EW.
