I am looking to turn one of my favorite all time casseroles as a kid into an IBS safe one. It has ground beef, cream of mushroom, small can of tomato sauce, rotel, cheese, any kind of noodles, ketchup and milk.
I know what I can substitute the beef, cheese, and milk with and I think that the small can of tomato sauce, ketchup and rotel will be okay? I guess it is the cream of mushroom soup..what can I substitute for that?
Another recipe that I am wanting to try but not at all sure if it is safe is Broccoli Chicken or Beef Lo Mein.
It has chicken, lg. onion, garlic, bean sprouts, sliced mushrooms, Lo Mein noodles or vermicelli, 2 to 3 c. of broccoli florets (cooked), soy sauce, Oyster sauce (optional), and ground ginger.
Is this safe or not? Sorry for all the questions. My excuse for them all is that I ordered Heather's book but it hasn't arrived yet so I can't read up on all this stuff:0)

Don't worry about it, Fressy, you're not being a bother! Let me see how many of your questions I can answer!
As for that casserole, you seem to know that you can sub ground turkey or soy crumbles for the beef, soy or rice milk for the milk, and soy cheese for the cheese. Campbell's tomato soup has HFCS in it, which is a problem for many people, so you might want to sub an organic tomato soup instead... Imagine Foods makes a great creamy tomoato soup! They also make a mushroom soup, which you could sub for the cream of mushroom. Otherwise you could make your own dry cream soup mix and use that instead. The ketchup should be fine, but what is rotel? I've never heard of that!
Let's look at that Lo Mein recipe. That one looks like it should be okay as long as you use boneless skinless chicken breasts, the veggies are very well cooked, and you eat it with a good soluble fiber base. Onion, garlic, bean sprouts, and broccoli are all problematic for some people because they're very high in insoluble fiber, so I would use those ingredients sparingly and make up for it with extra chicken. I bet this would be great served over white rice, which is a great way to get in that soluble fiber.

U are such an awesome help! Thanks sooo much. hehe Rotel is a mix of diced tomatoes and green chilies...I would probably only put in half a can. I was raised in Louisiana and I was taught how to cook "Cajun". Lots of seafood, cajun spices, roux, and rotel is in most of the dishes I make. It's been kinda hard trying to change some of the recipes around. Anyway, I reallly appreciate the help:)

Hi Knee you are going to make a cook out of me yet.I didn,t have any organic or homemade chicken both so I use 3 cans of 98%fat free chicken both.didn,t have any onion so use 1jar of Aunt Nellies Whole Holland- style onions.[don,t really know where I got them.]my hubby does the shopping , I did use a can of green beans but cut them up very small. use everything else you said.even put the cornstarch in.it was so good.11/2tbs.of cornstarch to 1/2cup of water.just right,just right,so good.thank you,my hubby said thank you to he didn,t have to cook supper.an I made some bread.boy am I getting good.Gerry

Gerry, I'm so glad you and your hubby liked the stew! You sound like a good cook to me, making all those substitutions. And thanks for the info on the cornstarch... I'll definitely write that down and add it next time! And I suppose I should try adding the green beans to get my insoluble fiber, right??
By the way, don't worry about the spelling mistakes. I wrote strew instead of stew and almost didn't catch it!
