The recipe means 1/4c. for the dressing and 2T. for sauteing. I use WAYYY less - I use about 1-2tsp for sauteing and maybe 1T. for the dressing and 1/4c. liquid from the artichokes instead.

I haven't tried freezing this - it never lasts that long!!

The artichokes I buy are in water - I wouldn't buy ones in oil. These are the ones I buy: Pastene Artichokes

I've made this a lot of times, and use 3tbsp of oil total.

Prepare the dressing, using 3tbsp oil and all the other stuff.
Cut up chicken into small cubes, open can of artichokes and drain.
Dump everything into the pan and cook at med-high. I'm tempted to make this with even less oil, 2tbsp is probably enough. And I like the idea of adding some of the artichoke juice for more flavour.

Cutting up the chicken makes it cook faster and soak up more flavour. It also doesn't stick to the pan as much so you don't need as much oil.

Thanks...do you use any oil for cooking the chicken or just use a cooking spray?

And I still haven't been able to find canned artichokes in water...only oil. Which do you use?

I made it last night again. I actually cook the chicken in the sauce, so no need for extra oil or spraying the pan. I only used 2 tbsp of oil, and it tasted great.

As for the artichokes, I've only ever found them canned in water so I'm not sure what to do with the ones with oil. Definetly drain them as much as you can, they should be fine.

Did you eat it with the orzo, as suggested? Or something else? I am really looking forward to trying this. I have gotten into such a rut with my chicken...I eat the same thing with it everytime. LM's roasted potatoe/snap peas/mushrooms. THat is excellent...but I need some other options!

Is the thyme the leaves or the ground powder? The ground powder would give you much more punch, so I wouldn't want to over do it! Can you guys tell I don't cook!

When I first made it I used the thyme powder. Lately I've just been forgetting to add it.

As for what to serve it with, I have it with any type of pasta, rice noodles or rice. The best is pasta though, the rice just seems like the wrong texture. For pasta I use any shapes or combinations of shapes, whichever you have around the house is fine.

...but I don't think my tummy liked it very much. The garlic must be a problem for me. I used 2 tsp of the jared minced garlic. How do you think it would taste without the garlic?

Or, it could be the fructose in the honey...but I'm betting on the garlic.

Also, did y'all have to use an entire lemon to get 1/4 cup juice?

I wanted more veggies, so added a bit of peas to this and served with spaghetti noodles. It was really good!
