did you still get 4 servings? I think I have seen those before and if I remember correctly, they didn't look like they contained very many veggies.

I'm pretty sure I still got around 4 servings, but it's been a while. The original doesn't actually contain too many veggies either. As a matter of fact it only calls for 2 potatoes. So I'm pretty sure there was at least that much in the bag. Sorry I can't be more specific!

How big do you dice the potatoes? And do I peel them first?

Also, what do you mean by sliced celery? Do you mean diced, like the onions? or whole, thin, stalks?

I do peel my potatoes, and dice them... well, I guess I'd say medium-sized. They don't have to be teeny tiny. It cooks long enough that they're always tender for me that way. It's the carrots that seem to take longer, anyway.

As for the celery, I mean you slice it across the stalk the small way, like this:


Actually, I slice mine about twice as thin as the picture, but you get the idea.

I made this for What's Cooking? 11/14 and it was so good! When I got home for work, I could smell it in my front yard! LOL I wasn't sure if it was that or not till I opened the door and realized that was what I was smelling. I can't wait for leftovers for lunch tomorrow!

I thickened it by following this step from Slow Cooker - Winter Vegetable Stew after it cooked for 8-10 hrs:

Mix (3 Tablespoons) cornstarch and (3 Tablespoons)cold water; gradually stir into stew until blended. Cover and cook on high heat setting about 20 minutes, stirring occasionally, until thickened.

I used the recipe exactly with the addition of the cornstarch/water step, and left out the green beans. Green beans are just plain blucky...no need for them anywhere if ya ask me!

You should try it. I had my leftovers for lunch today and it was so good! It really thickened up today though, but I like it like that. Everyone in my office was saying "What smells so good?" I didn't give them any!
