Potato Crust Pizza

My mom created this simple dish for me the other night.
Grate a potato onto a pizza stone shaping into a 1/4 inch or thicker round slightly pressing it all together. Bake in 350 degree oven about 5 minutes. Take out and spread on fat free pizza sauce, mushrooms, etc. and add grated soy/rice cheese on top. Bake until crust is crispy on bottom and cheese is melted. Yummy!!

You may need to experiment. I was not there to see how long she cooked the crust before adding the other stuff. I think she preheated the stone as usual.
