Yummy butterscotch apple cake

LOVE this cake! 1 cup canola oil ( you can use less) 4 egg whites 2 cups sugar 2 1/2 cups white flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 3 cups raw peeled and chopped apples (I use granny smith) 1 cup chopped pecans (optional) 1 11. oz pkg. butterscotch morsels
Mix egg whites, sugar and oil together. Add other ingredients, except the morsels and mix well. Spread in a greased and floured (use pam spray with flour) 13 by 9 in. pan. Sprinkle top with morsels Bake 50-60 minutes at 350. Enjoy!

How much less oil can you use? Because 1 cup is a LOT--that's the same as two sticks of butter! Plus the butterscotch chips are nothing but dairy and fat. Not that this cake doesn't sound good to eat, but I think I'd be sorry later....

Hi! I usually use 3/4 cup which is the same amount of oil used in Heather's pumpkin apple bread. I supposed you could use half oil and half applesauce and see how it turns out. As for the butter- scotch morsels, I have no problem with them or with chocolate chips. If you do, maybe you should stay away from this one. Everyone is so different in terms of what they can tolerate. Linda
