O. K. Chocolate "Purists" (you know who you are!)

Easy Chocolate Tofu Pie
from all recipes

1 pound silken tofu
1/2 cocoa powder
1 cup sugar
1 T vanilla 1/2t cidar vinegar
prepared graham cracker pie shell (I use Heather's)

Preheat oven to 375
Blend tofu in a blender until smooth. Add other ingredients and blend, then pour on the pie crust. Bake fro 25 minutes, then chill 1 hour.
Very easy and really yummy!

You've made this? How long does it last? There are only 2 of us, so I just wanted to know. For example, I know Heather's Better than Cheesecake is the best for the first day, so I've never ventured it yet, since there's only 2 of us. Would it last a few days in the fridge, do you think?

Hey wait! I just went to add this to the index, but it's already on there. But, the first time you posted it, you had a topping. What's the deal with the topping? Did you ditch it on purpose? (I thought this sounded familiar. )

Actually I have made it a few times already at it lasts just fine, although I have to be honest, it doesn't tend to stay around long!

I like it better without the topping. Sorry I put it on twice. I looked for it on the recipes, but must have missed it.

LOL - I don't think it would last too long around here either. I have to try to control myself around chocolate - it ain't easy!

Did you ever try Heather's chocolate version of banana creme pie? O-M-G!!! It's to die for!!

MMMMM. That's good to know. I've been trying to make banana recipes, but bananas never last long because my son has discovered how to peel them and feed them to the dogs!

I'm not ashamed. Yeah, I'm a choco-holic too. Mags ain't alone in this. I'll come forward. So where are the rest of you guys out there?! I know there are more choco-holics out there than us three.

I had already printed out this recipe when you first posted it -- I am SOOOO gonna make this -- but I gotta wait 'till hubby is out of town. He just wouldn't believe any kind of pie -- ANY kind -- is IBS-friendly -- and I'd never hear the end of it.

So you don't like the topping after all, eh? Okay, good to know. Yeah, looking at it, I'd have to agree -- why cover up all that good chocolate?!? Mmmmmmmm.

LOL - I know. I thought of that, but I'm trying. BUT, I have 2 good reasons she might like the choc ban cream pie. One, it bumps up the soluble fiber, so you can eat more! LOL Two, for some reason it gives this awesome flavor like there's alcohol in there (I took it to Thanksgiving dinner, and the guys were arguing over what type it was in there. LOL), and we know how she loves her Jack!

Ok, I'm a purist, plain and simple, and this recipe sounds wonderful, but (and read I'm crying and sighing here) I can't have it. First I can't have soy, being hypothyroid, second I'm allergic to wheat so can't have the crust.
Bummer.............
But.............I CAN make a chocolate pudding with cocoa, sugar, rice milk and cornstarch.............dump into an all oat granola crust or corn flake crust and have my (knock off) pie..........sheesh............still sighing.

BTW, Kristen, made your Gingerbread muffins, sans the glaze.........OMG, I'm addicted. They will be a staple in my house. I'm thinking about trying the easy way out.......dump in a big pan and bake, then cute into squares. I'm sooooo lazy!!!!

Kandee, you poor girl! I can't even imagine getting by without soy, I eat it sooo much. But your knockoff sounds just as good in this case!

I'm so glad you like the muffins!! So pouring them into muffin pans is a little too strenuous for you, eh? Lol!! Hey, I guess doing it in a pan is worth a try!

Were you scratching your head when I said I made your muffins, saying, "if she doesn't eat wheat flour, what DID she make them out of, ground tree bark?"....

Forgot to add I made them with my wheat flour substitute (rice flour, potato starch flour, tapioca flour, xanthan gum)...........and boy can that stuff get tricky. Sometimes it behaves itself, sometimes it doesn't. I made white sandwich bread one time, that turned out so bad....(more like a building brick).........that I threw it out to the birds and it took them a month to peck thru it!!!

Yep, darlin', I'm about as lazy as it get when it comes to cooking..........must have had something to do with not especially liking teaching it in the schools.......it was always more like "Animal House" with the food fights and burnt offerings!!.......but that's another story.

And when it comes to lazy cookie baking..............ever hear of slab cookies? It's when you take all that cookie dough you normally drop by spoonfuls and just smear it onto the cookie sheet instead…bake it and take with you to casual parties, tailgate parties, camping, whatever.... tell them to break off how much they want.....GUYS love the idea…. Novel idea, yes?
