This recipe was adapted from Mike Roy's "Crock Cookery," Ward Ritchie Press, 1975.
BOURBON BREAST OF CHICKEN
4 chicken breast halves, skinless 1/4 cup flour 1/2 teaspoon paprika salt 2 tablespoons oil 2 tablespoons chopped onion 2 tablespoons chopped parsley 1/4 teaspoon dried chervil 1/4 cup cheap bourbon (don'tcha dare use that Jack!) One 4-oz. can mushrooms, undrained One 10-oz. can tomatoes 1/4 teaspoon sugar 1/8 teaspoon Lawry's Season Salt Salt and pepper
Dredge chicken in flour which has been mixed with paprika and a little salt. Heat oil in a non-stick skillet, and saute chicken on both sides until lightly browned. Stir in onion, parsley, and chervil, and cook a moment. Remove from heat. Place chicken in crock pot. Combine remaining ingredients, and pour over chicken. Cover and cook at low for 6-7 hours. Serve with noodles or rice.
Serves 4.

It's a spice. If you can't find it, check it out here: web page It's interchangeable with parsley, and goes well with fish, chicken or vegetables.

Gerry, I know you were kidding -- but I'll be honest. Yes, it DOES help with the pain, believe it or not. Jack relaxes me -- ALL of me, including my gut. When I have a Jack, I feel like my old self.
Unfortunately, the suffering I go through AFTERWARDS brings me back to reality and my "new" self!
Don't do it, Gerry. It's not worth it.

Don't mean to insult anyone, but could cooking wine be substituted for the bourbon? I don't drink so I hate buying a big bottle of something I won't use much of. I've had a bottle of some irish liquor to make Roscommon Bread, and I have that for about 5 years! Thanks, Joan

You cutie-pie, you! How could your post possibly insult anyone? Passhaw.
I'm not familiar with Irish liquor, but I would not hesitate to substitute wine. Without either, however, I don't know about whether there would be much flavor, DESPITE all the seasonings. According to Mike Roy (the author of that cookbook from whence that recipe came-ith), you need a LOT of flavorings because stuff in crock pots comes out pretty bland.
Having said that, aren't most liquors rather pungent or sweet? (I wouldn't know; I'm only a Jack person myself!) You might try it, after all what do you have to lose? I'll bet the flavor might even come out better! (Unless, of course, you were using Jack!)

but I use Jack Daniels. I figure if I can't drink it, I'm by gosh going to eat it.
I buy mine at a liquor store. It's "hard" liquor, much more potent than wine, so whether you can get it in a grocery store depends on your state's laws for where liquor can be sold. It definitely would not be with the cooking wine - you'd find it wherever you can buy gin, vodka, rum, etc.

Listen, there's all kinds of cheap bourbon on sale, and you can buy those little teeny tiny bottles, like they have on the airplanes, for virtually pennies. The alcohol gets burned off in the cooking process, so do ya really wanna see all that good booze goin' up in STEAM?

I told you not to tell Bev! Now look at the trouble you've gotten me into. 
I would never have had any idea this dish froze well - it's never stuck around long enough for me to find out. I make it with 2 chicken breast halves and the recipe amount of everything else - I love the "gloop".
One note about tomatoes: I can't find 10 ounce cans of diced tomatoes, only those 14.5 ounce cans. I tried using all of one of those once and I think it makes the recipe too tomato-y, so now I measure out 10 ounces from the can and just use that.
Enjoy - this is unbelievably good.

I've always heard that when cooking with alcohol, if you wouldn't drink with it, you shouldn't bother cooking with it.
Would you by chance be willing to do an experiment and sacrifice some Jack one time when you make this just to see if it's true? (I have a feeling I already know the answer to this one! LOL) But, if you are up to it, I would be interested to see if it really is true and does make a difference - especially from someone I can trust to be honest about it! 
If it's not worth the sacrifice though, I completely understand.

I believe the quote you're referring to pertains to WINE, not bourbon. And I believe it's true -- as regards WINE. I have used cheap cooking wine and I have used a real nice merlot, and I can say from experience that there is no comparison. In fact, I just made my coq-au-vin (recipe in this Board), using merlot, and it's AWESOME, far better than that cheap "cooking wine."
Jack Daniels was meant to be sipped and savored, not thrown into a crock pot with chicken boobs. Furthermore, why would you pay top dollar for TOP QUALITY, really FINE bourbon, only to burn it off? There are other bourbons that would impart a wonderful flavor to the dish very nicely -- Jim Beam for instance -- and you could buy it one of those tiny little airplane-size bottles -- without having to resort to wasting that precious (and very costly) JACK.

It was a hard decision, but my desire for the recipe won out! Say you'll forgive me? 
So, you use the full amount of ingredients for only the two breast serving? I might try that because I like more mushrooms. Did you serve an individual veggie with this...or is it enough just in the recipe?
Good point about the tomotato. I would probably looking for a 10 oz can of tomato all over...and now that you mentioned it, I don't think I ever have seen the 10 oz can.
I might even add in another can of mushrooms to get more veggies.

Oh, sure. After all, I blabbed first.
If I'm feeling stable, I'll have a small salad with it. Otherwise, I just count the tomatoes, etc., as my vegetable. I serve it with noodles and that's my SF.

I make this very regularly but a couple of weeks ago I just didn't feel like making noodles to go with. So instead I made the chicken then just served it with French bread to sop up the juices - it was delicious.
