EASY good bread recipe?

I am not doing well with the baguette recipe as it domes out dense and heavy and hardens quickly. Any one have a fool proof bread recipe???? Or any ideas what i am doing wrong?? I have turned up the heat to aid rising, am baking on a stone, maybe I need to add more yeast?/ I am using Flesichmans's rapid yeast....

You're "baking on a stone"? Okay, I misunderstood you -- I thought we were talking about bread machines.

"Dense and heavy and hardens quickly" sounds to me like the temperature in your oven is too high.

I found most of my problems with baking bread is the yeast. If it's not ABSOLUTELY fresh, you're gonna have problems with it. Do you keep it in the fridge? Also, rising problems usually occur if there's a draft or the temperature is too low for it to rise. If you're getting a hard crust in the RISING, then it's too hot.

The best thing for rising bread dough is a gas oven. Put the dough in a bowl with a dishtowel over the top, and place in the oven -- don't turn the oven on -- the temperature from the pilot is PERFECT, and there's no drafts in the oven. You'll have a nice rise.

Better yet -- get yourself a bread maker. They're super!

Mine is a "Breadman Ultimate." I love it. Got it on sale a year ago at Linens-n-Things. Mags has one that she likes as well -- I think it's a Breadman. MAGS? You there?

Ok I want to start using my bread maker but all the boxed mixes at my grocery stores contain milk or something else that's a no-no. Anyone have suggestions as to where to find good/safe mixes! Bev you gave a web page. How do I find out if those mixes are safe? Do they list the ingredients?

Did you check your instruction manual, Steph? The instruction manual for my bread maker came with tons of recipes for my bread maker. And even had ideas for dairy substitutions. If yours didn't, I can gladly post some for you.

Bread box mixes, eh? The web page I gave was for FLOUR and bread bases -- it was Baker's Catalogue: web page They have fabulous flours (King Arthur's Flour), all kinds, and, as I said, the bases that you add to the flour are SOOOO good. Also, their flour is super fresh, as is their yeast, and, as you know, it's really imperative that yeast be fresh.

Perhaps Mags can help you with the box mixes? Although I have used them in the past, I don't use them because I really like making my own from scratch, and I like the flour I get from Baker's Catalog. I confess, though, I did not know they have milk in them.

Actually, making the bread from scratch is just as easy as box mixes. I'm curious; why do you want to use a box mix anyway, Steph?

I used a boxed mix once when I first got my machine. It was Krusteaz sourdough. I don't think it had dairy in it, because I probably wouldn't have bought it if it did.

Anyway, I've always made my own since then. If you want the mix for the convenience, when you make bread from scratch, measure out extra dry ingredients for more loaves, and store each loaf's dry ingredients in plastic bags. Then, all you have to do is measure your wet ingredients, then dump your dry ingredients in. Pretty much like a store bought mix.

I believe you are so right Mags, about Krusteaz. I checked them one time and didn't see any bad ingredients. I was shocked to say the least. Plus they make a heck of a good loaf for a beginner, and even some of us who can mess up breads even in a bread machine.

Steph, try the Krusteaz.....just check the pkg. ingredients first. Companies are always changing their formulas.

I haven't yet tried the Mexicano Bread Base, the Pumpernickel Plus Bread Base, Olives Plus, or Potato Dill Onion. The Savory Tomato was FABULOUS, and the Herb & Garlic Bread Base was good. Forget the Golden Malt -- YUK.

I've also bought non-edible items from them. The bread slicing guide is a MUST if you want to slice your bread with even slices, and their knife is excellent too. I love their stainless steel canisters; I bought several. I'll bet their fresh ginger is good, although I haven't bought any yet.

OH! And their Bakewell Cream is FABULOUS (maybe because it comes from my part of the country -- Maine!). It's a NON-ALUMINUM baking powder, which to me is really important since Don's mom died of Altzheimer's, and I believe it's from all the aluminum. (I won't go into this here because it was covered in another thread.)

Lets see, what else? .... oh yeah! The donut pans are terrific! You BAKE the donuts, like muffins, and they're pretty darn good!

Oh, and have you seen the ADORABLE heart cookie plate and heart cookie cutters? Perfect for Valentine's Day!

HI Bev!

Well I don't want to use box mixes. I thought that's what you guys were using. Where do you get your bread recipes that are IBS safe? I hate trying to make a recipe safe. I think I'll mess it up! Anyways if you have safe recipes you think would be easy and safe let me know! I don't really like mixes. I guess I was confused about what you guys were doing...I think I'm confusing it with another post SORRY So If you have some ideas for me....I'm ready to make some yummy bread!!!

Okay, you want recipes for BREAD MACHINES, or breads you make in the oven?

If you want a BREAD MACHINE recipe, here's my very favorite: Herb Sandwich Bread Note it calls for milk. I substitute soy milk or "Better-Than-Soy" powdered milk. One thing in this recipe you can't substitute is the Durkee's Famous Sauce. Ooooh, that stuff is incredible! It's hard to find; Safeway doesn't carry it, but Cost Cutters does. It's the basis for the taste in this recipe, so if you can't find it, don't make the bread.

In that same website -- Fleischmann's Yeast -- you'll find a lot of great recipes for bread machines. Here's another: Sour Cream 'n' Chive Potato Bread Again, substitute soy milk for the milk, and "Better Than Sour Cream" non-dairy sour cream. This is a very tasty, light bread with a nice texture.

I have more, but they're not on the web. Here's one:

TWO CHEESE BREAD (Makes a 1-1/2 lb. loaf, but raises REAL high!)

2/3 cup warm water
1 tablespoon vegetable oil
1 egg
2 teaspoons sugar or honey
1 teaspoon salt
3 cups bread flour
1/4 cup Better-Than-Soy dry "milk"
1 cup grated soy cheddar
3 tablespoons grated soy parmesan
2 teaspoons sesame seeds
1-1/2 teaspoons active dry yeast

Follow directions on your bread machine. Note that it raises REAL high. It's VERY good, although you can't really taste much of the cheese.

Steph, if you want more, just scream. I'm a little unclear as to whether it was bread machine recipes you want or bread that bakes in the oven. If you want the latter, I have a killer mustard-onion-dill bread that's to die for.

Bev, after reading your post on your breadmaker, I went into town and bought one, a Breadman. Bought my yeast and flour, and tomorrow, I am going to tackle the art of making my own bread!
