This recipe is GREAT! I'm going to make a double batch next time! I added a handful of finely shredded carrots, and before serving, I whipped the whole thing through the blender and it came out smooth and creamy. Delicous!!!

I made this for lunch today and it was a big hit. Thanks so much for another great recipe. Plus, leftovers!

Changes:
Omitted the cheese.
Used 1 tablespoon canola oil instead of 2 tablespoon safe margarine. The soup tasted fine but my roux didn't brown - the flour just sort of clumped, then smoothed out when I added the liquid.

Next time I'm going to crisp-fry a slice of turkey bacon and crumble it on top. (I'm not super sensitive to fat, but if you are - "don't try this at home".)

I don't see why not as long as the almond milk isn't flavored/sweetened.

Could you use "Potatoe Pearls" ... dehydrated potatoes instead of instant mashed potatoes. Are they the same things?

I would think so. I use Betty Crocker's Potato Buds and they're just:
Potatoes
Mono and Diglycerides (to improve texture)
Sodium Bisulfate and BHT (preservatives)

Ick. I shouldn't read labels once I've bought something.

I've also always thought that I could probably use actual mashed potatoes. I'd just need to work out how much liquid to take out of the recipe based on how much liquid I use in making the mashed potatoes. But Potato Buds/Pearls are much easier. Unless I have leftover mashed. Hmm.

(I didn't realize until I did a Google search that there are actual pearls called "potato pearls": web page. Pretty cool. )
