Garlic Shrimp & Pasta

Garlic Shrimp & Pasta

Prep/Cook Time: 25 min.

2 tbsp. cornstarch
1 can (14 oz.) chicken broth (1 3/4 cups)
2 cloves garlic, minced
3 tbsp. chopped fresh parsley OR 1 tbsp. dried parsley flakes
2 tbsp. lemon juice
1/8 tsp. ground red pepper
1 lb. medium shrimp, shelled and deveined
4 cups hot cooked thin spaghetti, cooked without salt

MIX cornstarch, broth, garlic, parsley, lemon juice and pepper in saucepan. Heat to a boil. Cook and stir until mixture boils and thickens.

ADD shrimp. Cook 5 min. or until shrimp is done. Toss with spaghetti. Serves 4.

I only took stuff out...I took out the pepper. But it was still very good.

I wanted to stick with the recipe to see what we liked instead of adding stuff. I am just not that brave yet LOL

I was wondering about the pepper... not everyone can handle it... I like to as Emeril says..."kick it up a notch"

Glad it was good enough to serve as a Birthday dinner too....that is great!! Same question Torbetta... did you make any changes to it at all? Do tell.....

I just might have to make this again this weekend...... my mouth is watering!!

Made this again tonight.... UUmm... I used Chipotle!! Next time I'll use a little more then just the 1/8 tsp... was not enough for us.... but still way yummy and FAST.... the most time consuming part is the garlic.

It was so yummy! I followed the recipe exactly. You liked it with chipotle? I'll have to try that next time. It was really good, but I like it "kicked up a notch" too!

I used cooked chicken breast cut into chunks this time in place of the shrimp (just cuz I already had the chicken to use up) It was very yummy!

I took a bunch of asparagus, and cut it into bite size pieces. I cooked the asparagus in the water I was using for the pasta first. I cooked it till it was almost done, then added the pasta, so it finished together, then just tossed it with the shrimp & sauce. VERY VERY YUMMY!!!! Mikey LOVED it!!!

I'm going to be taking care of my Mom starting on the 30th for about a week or so... because she is having a knee replacement surgery. So, after she is off the HARD CORE pain meds... I'm gonna have to cook some stuff for her.... what a perfect time to show off my ability to cook...and not have to worry about left overs (cuz Shane does not care for shrimp that much) I'll have to see if I can think of another twist to this one.....

I made this recipe and it was delicious! Super quick to make too considering how good it tastes. I also left out the pepper and it tasted fine. Next time I'm putting the pepper though.

My question is about the cornstarch since I've never actually cooked with it before. I put in 2tbsp into the chicken broth (was hot, does this make a difference?) and it got super clumpy and never de-clumped. What's the trick to this?

mix the cornstarch with a little bit on cold water prior to putting it in the pan with the other ingredients. It makes it similar to a light paste.. and works much better than simply dumping corn starch into the pan. It mixes better with cold liquids first.

You guys reminded me of the recipe and I made it for lunch today

Spaghetti or angel hair pasta
Shrimp
Earth Balance Buttery Spread
Garlic Salt

When I make it, I cook a single serving size of pasta (about the diameter of a nickel when you hold the dry pasta together). Boil water, toss in pasta, sautee shrimp (about half a cup worth per serving) with canola spray or in a small amount of canola oil. When the pasta and the shrimp are done, add the shrimp to the pasta and stir in about 1 T of buttery spread and 1 teaspoon of garlic salt. Of course, you should adjust your measurements to taste.
