Greek Style Lemon Chicken
Prep Time: 10 min Total Time: 25 min Makes: 4 servings
1 Tbsp. oil 1 lb. boneless skinless chicken breast, cut into strips 2 cloves garlic, minced 1/2 cup grated carrot 1 Tbsp. grated lemon peel 1 can (14-1/2 oz.) chicken broth 1 Tbsp. dried parsley 1/4 cup sliced black olives 2 cups uncooked MINUTE White Rice Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 to 8 minutes or until chicken is no longer pink inside. Add garlic during last few minutes of cooking.
Stir in carrot, lemon peel, chicken broth, parsley, olives and rice.
Bring to boil; cover and let stand 5 minutes.
