'cheesecake'

Yesterday we made the 'cheesecake' from the efi book. We only don't hsve graham crackers so we used different cookies. That part was very soft and not crunchy. Is that normal or should the crust be crunchy? We used lemon curd on top of it and the taste is great. Thank you.

I've never made Heather's cheesecake recipe, but the crust on a cheesecake is usually soft, so yours turned out correctly.

What kind of cookies did you use instead (just curious)?

I am not sure if it's an good english word. I used 'tea biscuits'.
