safest way to cook zucchini and baby carrots

What is the safest way to cook these veggies? When I boil zucchini in water, it turns out all mushy and full of water. When I roast carrots, I have to add extra oil. I don't have a steamer. How do you all cook these veggies?

Peel and boil or steam carrots until very tender.
Peel and lightly fry zucchini until tranlucent.

when I boil, they turn out all mushy and full of water. I don't peel because I need some IF in my diet since I'm C. Thanks, Syl.

Yes - in a very small amount of olive oil on a medium heat. I dice zucchini.

I don't boil zucchini unless I am putting it in soup - I dice it and lightly fry over medium heat in a small amount of olive oil.
