Gluten Free pancakes

There are many recipes out there for GF pancakes. Some take lots of time to mix up, others are very expensive, many taste awful (grainy from the rice flour), etc! (Welcome to the world of gluten free, right?!) BUT- I've finally found one for those times when you want pancakes NOW and you want the convenience of a box mix. I've made 3 key changes to their recipe in order to make this IBS safe.
(BTW: this mix is great for our IBS anyway...the only ingredients in the mix are rice flour, sugar, leavening, potato starch, salt, and xanthan gum).
The recipe and my changes are:
1 c. Bisquick GF mix
1 c. milk... substitute 1 c. vanilla soy milk
2 T. veg oil... substitute 2 T. applesauce
1 egg... substitute 2 egg whites
That's it! You just stir it all together, spray your pan with Pam, and make the pancakes. If yours are too thick and aren't cooking all the way through, just add a touch more soy milk. I had made these before I knew I had IBS and made them according to the box directions. I can truly say that they are MUCH better made the IBS way!! My kids always ask to share mine
For toppings: I use pure maple syrup sometimes. I also like applesauce poured right on top. I've melted jam in the microwave - my favorite is seedless blackberry- and poured that over. You can also put a layer of frozen or fresh blueberries in a frying pan and add just enough water to cover the bottom of the pan but not cover the berries. Turn on a med. heat and let them cook until the blueberries burst. Sometimes I thicken this with a bit of cornstarch, and sometimes I add a touch of sugar or brown sugar to the berries if they're not sweet enough. We live near a huge blueberry farm and this recipe was on one of their fliers.
Oh...the Bisquick is, like most specialty GF items, pretty expensive. The box is tiny. It's found next to the giant, cheap boxes of regular Bisquick. Hey... maybe it'll come down in price eventually! There are recipes for waffles, biscuits, and strawberry shortcake that I'm sure could all be converted in a similar fashion.

Hey, KellyJean.

I don't have to eat gluten-free but I thought I remember a thread with gluten-free pancakes in it. I found it and what it has is a recipe to make gluten-free "Bisquick". I don't know if that would be cheaper than the store-bought but you could take a look. The thread doesn't say how to make pancakes out of the mix - just muffins - but maybe you can work with it. And the thread has lots of other GF recipes in it.

Happy Monday, Sand!
Thank you so much for taking the time to read my post and then look up those links for gluten free recipes (and you don't even have to eat this way yourself!) I really appreciate these message boards- it's great to "meet" other people who have similar issues (IBS, Celiac...) and encourage and help each other.
I'm sure that Bisquick recipe would be cheaper than the name brand, but I'd have to figure out what to do about the dry buttermilk powder that they used. I might try it once just using a product like Better Than Milk Soy powder and not worry about the "buttermilk" part.
I looked through the other recipes on that link and found that most of them were things I use already. It's always good to be reminded of recipes tho- we tend to make something a lot and then get away from it for a while and forget how good it was! I haven't checked out celiac web sites in a LONG time; I just got used to cooking that way and have focused much more on the IBS recently. I think I'll spend a little time looking at some updated information. Thanks again! KellyJean

Yeah, the dry buttermilk powder didn't even register with me. Good catch!

I wonder if you could mix up everything but the dry buttermilk powder, then you your own "buttermilked" rice or soy milk when you use it.
