Chocolate Peppermint Pudding!

Yum! I just finished making a batch of Heather's delicious Choc. Silk Pudding from her cookbook. I've made this several times already and always love it (so do all my kids!). Today I felt like trying something different, so I added about 1/4 tsp of peppermint oil at the very end (instead of the optional almond extract). It tastes great! I'd start w/ the 1/4 tsp and then add more by the drop til you like the strength of the peppermint.
Also- Something I learned a long time ago when I had to start cooking and baking for my Celiac diet (which can be VERY time consuming because you so often have to take the time first to mix your flours to the mix called for in specific recipes, or make alternatives for things like onion soup mix, dressings, etc). I finally learned that I could save a lot of time and frustration by bagging up multiple batches of DRY ingredients to keep on the pantry shelf as "convenience" mixes. For instance, when I made my pudding today I laid out 4 baggies on the counter. I labeled each "Heather's Choc. Silk Pudding...page 230". Then I started filling them with the first 4 ingredients from the recipe (sugar, cocoa powder, cornstarch, salt). I like to fill all 4 bags with sugar, then add the cocoa to all 4, then go down the line with the cornstarch, etc. It keeps you from getting confused about which bag has what in it. The bags are now in the pantry ready for the next time I want pudding.
This idea saves more time and steps on some recipes than others, but for those of us with special diets- and the need to have good food choices ready and available at all times- it's great to find ways to make life easier!!
Hope this helps some of you- and try the pudding today if you've never made it- it's soooo good!

If you have an IBS-safe recipe for dry onion soup mix, I'd love to have it. Thanks.

(I haven't made Chocolate Silk Pudding in ages. The peppermint sounds good. I wonder how it would be with rum extract? )

This looks great. Also the tip for making bags of the dry ingredients. I think it saves a lot of time. Thank you.
