Whats a good meat for stew?

My dh was wanting some stew I have a bunch of can veggies I just want to now what woould be a good meat for this and how much broth and seasonings should I use? I miss the old stew meat it was a roast I never ate the meat just like the flavor it gave but I know its way to high in fat now. Any advice would be great!

Chicken absorbs flavors wonderfully. However, I don't think your stew will taste quite the same as it would with the "real" stew meat - red meats have a very distinctive taste to them sometimes. So perhaps you could try making the stew with the chicken, but also with some beef bullion powder? I believe that's fat free (someone correct me if I'm wrong)...have fun cooking, I hope it turns out whatever you use!
