Rice Dream Choc Pudding

I find this on another site, thought it would be a good IBS recipe, not tried it so let me know if its nice!!

Rice Dream Chocolate Pudding

1 1/2 cup rice dream (vanilla or plain)plus another 1/2 cup of cold rice dream separate

3 TBS cornstarch
5 TBS sugar
1/4 tsp salt
3 TBS unsweetened cocoa powder
1 tsp vanilla

heat 1 1/2 cups rice dream in saucepan on medium heat. do not boil, just heat to scalding stage. while that is heating, take the rest of the ingredients except vanilla, and stir them together in a bowl. Then add the 1/2 cup of cold rice dream that you set aside to those dry ingredients and blend well. Turn up the heat and slowly pour it into the hot rice dream in the saucepan, whisking all the while. Continue whisking while it comes to a boil and boil one minute. Remove from heat, pour into a bowl, add vanilla and let cool on counter before putting in fridge.

Variations:
I added a TBS of coconut extract to ours for a chocolate coconut flavor. You can do it with almond extract also for chocolate almond. Another flavor would be to add a TBS of freeze dried instant coffee and make it a mocha pudding. You can use peppermint extract or even creme de menthe for chocolate mint pudding.

I'll give this a try! I've been making a similar recipe, but have found that the ratio of cornstarch to rice milk is not enough to make a thick enough pudding for me. My recipe calls for 1 1/2 cups (not the extra 1/2 cups in your recipe) soy milk (but I use rice milk) to 3 Tbs. cornstarch. I make a double batch and have been increasing the proportion of cornstarch. The last time, I used 8 Tbs to 3 cups rice milk, but it still seemed too thin once it had been in the refrigerator. Decadently delicious, though!
