Simple Crackers!

Here's a easy rice cracker recipe. No wheat, no yeast, no soy,... WOnderful for smoked salmon and dips...

1.25 cup of Ener G Rice flour mix (at health food stores)(White rice flour!!!)
1/4 water
1 tbsp sugar
4 tbsp of butter (whatever light butter substitute you may use)

Flour in bowl, then add butter (which i put in microwave for 30 sec to get soft), slowly add water until a good dough forms, may need more or less. Put dough on parchment paper, roll with baking pin. After it's flat, cut squares with pizza cutter and put on baking sheet with spatula. Bake for 14 minutes at 400 degrees.

Mine turned out wonderful!! Please write me if you encounter problems. These are wonderfully IBS safe and great for safe snacking!!!!

Hi allyk0528!

Thanks for posting this recipe! I have a couple questions though. I've been trying to find a good cracker to eat and would like to try these.

Instead of using white rice flour would you be able to use regular unbleached white flour? I don't have a gluten intolerance just the IBS. That's my first question. My second question is, is there a substitute that I can use instead of butter? Like oil or something like that? Even the dairy free butters bother me.

If I can substitute I would love to try these!!
