I've been searching the web and there are a lot of different recipes out there. Some tell you drain the tofu others don't. I'm just not sure which to use. I was wondering if anyone had a good one. I want to make lasagna or a baked ziti casserole and I want to not be able to tell the difference. Thanks! Years ago I made a similar dish with tofu mashed with a small amount of grated parm and it was great! Try this one and let us know how it goes. I actually tried it today. The recipe called for 1 lb silken tofu and 1 lb firm tofu. I used 2 firm. I omitted the nutritional yeast. It didn't taste too bad when I ate a spoonful. I'm trying it with baked ziti tonight for dinner. Here's the link for the recipe I used.
