Safe Blackend Fish recipe?

Has anyone ever developed a safe Blackened Fish recipe? The basic idea is: use a super hot cast iron pan, dip fish fillets in melted butter, dip in spices and cook. The butter solids scorch and form a dark brown coating on the fish. Normal recipes use a TON of butter. I'd like to try cajun style Blackened Fish, but I'm not sure if soy margarine or something else can replace the dairy butter.

If you check the Recipe Index (there's a link in one of sticky posts) you'll see at least four recipes called "Blackened" whatever. I don't know if any of them will be what you want but they might give you some ideas about stuff to try.
