Greek Style Lemon Chicken

Total Time: 25 min
Makes: 4 servings
1 Tbsp. oil
1 lb. boneless skinless chicken breast, cut into strips
2 cloves garlic, minced
1/2 cup grated carrot
1 Tbsp. grated lemon peel
1 can (14-1/2 oz.) chicken broth
1 Tbsp. dried parsley
1/4 cup sliced black olives
2 cups uncooked MINUTE White Rice
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 to 8 minutes or until chicken is no longer pink inside. Add garlic during last few minutes of cooking.
Stir in carrot, lemon peel, chicken broth, parsley, olives and rice.
Bring to boil; cover and let stand 5 minutes.

This is an incredibly delicious recipe! WoW! I ran out of carrots and put in some mushrooms which was tasty, and also wondered if you could put in shrimp? Thank you so much for posting this.
