Yummy fudge !!! And easy !!!

I made some fudge I found on this site. The taste was very good,but very soft and I used the smallest pan I had,and it was only about 1/4 in. thick. So I made changes-here goes.

Spray an 8x8 square cake pan with canola oil. In a large bowl put:

6 cups powdered sugar
add 1 cup sifted cocoa powder, mix together.

Using a double boiler over simmering water, melt:

3 TBS.smart balance light(it's vegan)
1/2 cup soy milk mixed with 1 tsp.corn starch.

Add 1tsp. vanilla.

Stir together.

Add the sugar mixture about 1 cup at a time, while stirring (it won't look like all the sugar will fit in,but it does)keep stirring and folding over and scraping the sides and bottom of the pan.

When it looks like fudge(dosn't take that long):

Add 1/2 cup chopped nuts,if you like!

Scoop out into oiled pan and spread out even.When cooled place in frige for about 2 Hrs.

Turn out onto cookie sheet or cutting board,I used a pizza cutter to cut into squares.


Came out of pan very easy. I got 49 pieces about 1 in. square and 3/4 in. thick. I eat a piece or two after dinner. It turned out very yummy and just like fudge!!!

That sounds really good - I'll definitely give it a try. Sweets are definitely my downfall and I love having good "replacement" sweets around for when I need a sugar fix.

You inspired me to make fudge, but I didn't have enough powdered sugar, so I decided to "fudge" the ingredients in my old fudge recipe to be more IBS friendly. It turned out great! If you don't mind, I'll share it here too so we don't have another thread on fudge

1/2 cup almond milk
1/2 cup Earth Balance spread (or equivalent)
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1/8 tsp salt
1 tsp vanilla extract
2 cups confectioner's sugar
1/2 cup cocoa

1. In heavy saucepan, add almond milk, Earth Balance spread, brown sugar, granulated sugar and salt. Cook at medium heat until boiling. Boil exactly six minutes, stirring constantly.

2. Remove mixture from heat and add vanilla, cocoa and confectioner's sugar. Beat with a mixer until smooth (if mixture is too dry and "pebble-like", add almond milk a tsp at a time to the mixture as you mix until you get a smooth consistency). Once well mixed, press the lump of fudge down into an 8 x 8 pan sprayed lightly with cooking spray. Freeze for 20 minutes then cut into squares in the pan. Once cut, the squares will easily pop out of the pan and can be placed in Tupperware in the fridge for storage.

I can get 49 small squares (bite size pieces - 7 rows of 7) from this recipe. Each square = 55 calories, 1.9 g fat, 10.6 g carbohydrates, .3 fiber and .2 protein.

As soon as I get to the store this weekend and get more powdered sugar, I'll try your recipe out. Now I have a great reason to make MORE fudge....not that I need one....LOL
