Flax oil in sourdough bread

I have been experimenting with adding flax oil to the sourdough bread I make in a bread machine. I have been finding that the bread seems much drier even when I add flax oil with olive oil to the bread mixture.

Has anyone else experienced a problem with adding flax oil to bread recipes?

I can't answer your question but I'm just curious. I have no experience with bread machines so I don't know exactly how they work. But I would be hesitant to adding flax oil to anything that is to be heated up or baked as I thought that kind of oil is too unstable for heating and should only be eaten in salad dressings et.c.

I sort of figured that the problem might be due to the low smoke point of flax oil. It has a smoke point of 107C while olive oil has a smoke point of around 240C. I believe the baking temperature of the bread machine is around 175C.

Funny about not being able to cook and bake with flax oil when you can put flax meal in baked goods.
