Cranberry-Blueberry Muffins

These muffins are great! They taste like the cake-like ones from the store and they're low fat.

Mix:
4 egg whites
1 t vanilla
1 c soured soy milk (with 1 T apple cider vinegar)
1/4 c oil
1/4 c applesauce

Mix:
2 c flour
1/2 t salt
2/3 c sugar
1 T baking powder

Add the liquid to dry and stir until just mixed.
Fold in 1 c each cranberries and blueberries.
Pour into muffin cups and sprinkle with sugar.
Bake 375 degrees for 25 min.

I used frozen. I think fresh or frozen would taste best, but dried would work too.
