Maple-Glazed Sweet Potatoes

Yet, another fabulous recipe from the new Dieter's Edition of Better Homes and Garden's Cookbook.
This makes a GREAT side dish and is incredibly nutritious.

Maple Glazed Sweet Potatoes

Ingredients:
2 lbs of sweet potatoes (4 to 6 medium)
1/3 cup pure maple syrup
3 tbsp Dijon-style mustard
2 tbsp olive oil
½ tsp salt
½ tsp freshly ground black pepper
½ cup fresh cranberries

Directions:
1. Peel and cut the sweet potatoes into 1 to 1 ½ inch chunks. In a large bowl combine the maple syrup, mustard, oil, salt, and pepper; add sweet potatoes and cranberries. Toss to coat. Transfer the mixture to a 3-quart baking dish, spreading mixture evenly.
2. Bake, uncovered, in a 400 degree oven for 30 to 35 minutes or until potatoes are glazed and tender, stirring twice.

Natalie, this sounds INCREDIBLE!!! I LOVE sweet potatoes and just saw fresh cranberries on my last grocery trip...I think I know what I'm doing with those sweet potatoes on my counter now...mmm....
