Found this on the hungry girl web site can it be fix?
thanks!
One 15-oz. can pure pumpkin
One 12-oz. can evaporated fat-free milk
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
3/4 cup Splenda No Calorie Sweetener (granulated)
2 tsp. pumpkin pie spice

Directions:
Preheat oven to 350 degrees.

Combine all ingredients in a bowl, and mix thoroughly.

Place mixture in a baking dish (8" X 8" works well) sprayed lightly with nonstick spray, and bake in the oven for 45 minutes. (It will remain a little soft, like pie filling.)

Once ready to serve (it's delicious eaten hot or cold), cut into 9 pieces.

Serve and enjoy!

MAKES 9 SERVINGS

There it is -- hope you love it! BTW, store leftovers in the fridge... if you have any!

Hi, Emmasmom -
So glad to see you still on here.
I got the same recipe today (I subscribe to her e-mail ...
It sounds delicious, like pumpkin pie w/o the crust and the crust is where all the fat is anyway.
I wonder if you could add cinnamon?
Hope you are doing well & your family.
Blessings - Dorothy

I would just look for a similar recipe without evaporated milk. Tofu can be subbed for evap milk and sugar for splenda but it would take some experimenting.

"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!

Thank you for missing me!
I tried to post a new picture. Ended up deleting the old one and could not get the new one to post. So, I've followed the instructions and e-mailed one to Shell to post...No change, other than a year older!
Take care, sweet lady! {{Hugs}} & Blessings - Dorothy

I found this recipe for vegan caramel that uses a homemade, vegan substitute for condensed milk. I wonder if this would work as a substitute in this recipe?

Vegan Sweetened Condensed Milk Recipe
(I think this makes 1 cup)
Ingredients:

* 2 cups soy milk
* 1 ¾ cups brown sugar
* 2 Tbsp. corn starch

Directions:

1. Measure the corn starch into a small glass or measuring cup.
2. Add 2-3 Tbsp. of the soy milk and whisk with a small whisk or fork until smooth.
3. In a small saucepan, heat the remaining soy milk and brown sugar. Whisk in the cornstarch-soy milk mixture.
4. Bring to the boil, stirring constantly until thick.
