what are some fast,tasty recipes I can do with 2 pieces of skinless boneless chicken that requires things I would probly have around the house so I wouldn't have to shop? I have no tortilla's or sandwich bread...but I have quite a few diffrent spices..I have chicken broth..but no ginger root or I would make the chicken and rice soup recipe from this site..I have ginger powder,would that work?

That would work, I think. Fresh herbs are best, but I don't usually keep them on hand. I'm not sure how much you'd substitute, though.

I have the best chicken recipe. It's easy and I have converted it to IBS-safe ingredients. Unfortunately, I got this from my friend's stepmom who said real Italian cooks don't measure ingredients but it's never come out badly. (I've even played around with the spices and it's always wonderful.)
You need: chicken breasts cracker/bread crumbs egg whites milk (soy is fine) Italian Seasoning (the originator used basil, parsely, oregano, and probably some others but this was easier for me) Parmesan cheese (soy is fine) chicken or vegetable stock/bouillon
1. Mix the egg whites and milk in one bowl and the bread crumbs and seasoning in another
2. Cover the breasts in the milk and egg mixture and then roll in the bread crumbs
3. Place in a baking pan and sprinkle with Parmesan cheese
4. Bake at 350 for 30-45 minutes (depending on how thick the breasts are)
5. Remove from oven and pour the bouillon over the breasts to moisten
It's wonderful with crusty French bread! I hope this helps.
