Are we allowed to fry up ground chicken? I forget. If so, maybe fry up the ground chicken crumbly like you'd do for ground beef, fix the couscous, and mix them together. Maybe you could sprinkle some sort of easily-tolerated spice into the chicken while you're cooking it.
If you've got some veggies there that you can tolerate, you could mix those in there too (I can do peas, some people can't).
Or maybe shape the chicken into patties like burgers, but bake them in the oven or grill them up on the grill and serve them on a plate beside the couscous, or even put the couscous on top of the chicken. Not a sandwich, more of a chicken steak sort of deal.

You can fry it as long as you use a spray type oil like canola oil. Also you can boil the chicken (white meat only) and then grind it up like hamburger. If you boil it the and let it cool the grease will float to the top and you scoop it off of it. It a easy, quick, and less fattening way of cooking it.
