Italian eggs over spinach and polenta

If you can handle red sauce this is an easy and tasty recipe. My husband loved it, and the reviews were good.

We had it for an easy dinner. I ate more polenta (I made it ahead of time myself and chilled it in a dish with plastic wrap and then broiled it in the toaster oven.) and less marinara. I added garlic and lots of basil to the sauce and just put 2 egg whites in for me and whole eggs for DH. Polenta is super yummy. Just follow the directions on the cornmeal canister for cornmeal mush. Also use safe white cheese in place of asiago of course.
