Looking for a EASY recipie with WHite beans??

I am extremely C right now and I haven't figured out what to make for dinner yet. I have some Cannelin beans that I thought would give me some good fiber of course cooked right with no pain.. Anyone have any Good recipes with beans that is safe but good fibers.. Maybe something with can diced tomatoes, Rice etc.. The only beans I have had since being on the diet for 1 year now is hummus. So I would like a recipe for something else that has beans thats easy.

I make a white chicken chili....
Prep Time: 5 minutes
Cook Time: 15 minutes
Makes 4 servings.


You Will Need:
1 pkg. McCormick® White Chicken Chili Seasoning Mix
1 tbsp. oil (you don't really need to use oil)
1 lb. boneless skinless chicken breasts, cut into ½-inch cubes
1 cup water
1 can (15 to 16 oz.) white beans, undrained
Assorted Toppings: Shredded Soy Cheese, Sliced Avocado, Chopped Cilantro


HEAT oil in large skillet on medium heat. Add chicken; cook and stir 3 to 5 minutes or until no longer pink.


STIR in Seasoning Mix, water and beans. Bring to boil; cover. Reduce heat and simmer 10 minutes, stirring occasionally. Serve with toppings, if desired.

I like Shell's Southwest White Chili. If I have fresh cilantro I throw it in, otherwise I just skip it. Also I never use the green onions.

Another good recipe with white beans is Tomato and Bean Soup. It's got tons of vegetables in it. Go heavy on the zucchini and carrots for more SF, add in more stuff like green beans for more IF.
