I would sub the milk with soy or rice milk. Also sub the margarine with smart balance light. I am not sure about the whole grain flour either? How many servings does this make?

When I "used to cook" - just so busy lately - I kind of throw things together... i.e. rice, peas, carrots - LOL Anyway - I made scalloped potatoes and my recipes was similar to this. However, if you are trying to go gluten free, you might: 1) Make you sauce separate - substituting cornstarch for the flour. 2) Can substitute chicken broth/stock for the milk 3) Saute onions in oil/Smart Choice/Butter... then do above.... My family always loved scalloped potatoes - good ole' Southern dish! Blessings! Dorothy
