Veggie Turkey Tacos or Taco Lasagna

This is a favorite in are house. I Think I got this recipe from Rachel Ray.
2 1/2 pounds ground turkey or chicken
1 zucchini grated
2 carrots peeled and grated
1 onion(omit if prolbem)
1 cup chicken stock
Season to taste with salt and pepper or taco seasoning if you can handle it.
Heat large skillet and spar it really good with cooking spray. Add the meat and brown 5 mins. Add the veggies to the meat. Season and cook 7-8 mints til veggies are soft. Stir in chicken stock. Ok theres to ways to makes these you can eat them in a Tortilla shell with tomatoes and lettuce and so on like tacos or do this Spray a 8 by 13 inch dish layer in 3 overlapping floue tortillas and top with 1/3 meat and some safe cheese( if you can). Repeat layers twice and bake 10-12 mins.Cut into squares and serve. Then top with lettuce tomatoes what ever else you want we fix brown rice to go with this. Enjoy!

These sound yummy. How do you do with taco shells? I feel like they are fried, but maybe I'm wrong. I don't know if you can get baked ones like the baked Tostito type?

Also, how many tacos does this make? I'd probably be making it only for myself so I'm guessing I could use a LOT less meat...?

You could always eat it on a flour tortilla too. I have not tried the recipe below but sounds interesting though.

Baked Tortilla Chips and Taco Shells

Here's an easy way to bake your own tortilla chips!

Soft corn tortillas

Preheat oven to 325 F. and place yellow corn tortillas on the wire rack. Bake until they begin to turn a darker color, about ten minutes, but remove immediately, as they will burn if left in the oven any longer.

To make non-fat crispy taco shells, place each tortilla so that it is centered over two of the wires on the rack, placing the edges of the torillas under the other wires. Bake as above - they will curl around in an upside-down 'U' shape to make perfect taco shells. From Dr. Neal Pinckney, Healing Heart Foundation
