Question about Pam . . .

I've been using Pam, but have had a problem. When I make cupcakes or breads and spray the pans with Pam, they don't rise much and the tops tend to be flat.

It was mentioned once that stale baking powder or not using enough baking powder might be the problem. But that doesn't seem to be it, because cupcakes/breads rise just fine in muffin tins when I use paper liners.

Any suggestions?

They're not rising because Pam is making the pie pan too slippery--certain breads/cakes require a non-greased pan so they can "climb" up the side and rise properly. The paper is giving something for the dough to "grip" as it cooks, so it rises correctly.

Some baking recipes say to grease bottom and sides of a pan and some say grease bottom only. If you just spray the bottom and not the sides the muffins would rise better.

Thanks, Little Minnie and strph! That really makes sense. I'll have to try just greasing the bottom of the pan sometime and see how it turns out.

I also wanted to mention that a lot of times people leave salt out of recipes but salt helps the baking soda work.

Try silicone bake ware.No Pam ,oil butter or flouring.They work great.When making cupcakes in the pan or muffins use the paper sleeves.
I use the silicone for EVERYTHING now.ITS GREAT!!!!!
