Acorn Squash, Tomato, and Kale Stew

Here's another great recipe! Very easy!

1 Acorn Squash
1 can 16oz whole tomatoes w/juice
8oz. of Kale (I just guestimated and put a good bit for greens)
1 tbsp garlic diced
1 tbsp olive oil
1 tbsp fresh basil chopped
1 tbsp fresh sage chopped
(if using dried basil/sage, cut it in half)

1. Peirce squash a few times and microwave for 2-3 min. You should be able to press thumb in it to tell if it's a little tender. Peel, cut into quarters, and remove the seeds, then cut into chunks.

2. In a large saucepan, cook the Olive oil and garlic until fragrant about 30 seconds. Add the tomatoes with juice, squash and 1/2 cup water. Cook for 25-30 min. or until squash is tender but not mushy. Use the back of a spoon to split tomatoes into pieces.

3. Add kale, basil, and sage, and cook for another 4-5 min. or until kale is tender. Serve!

4 Servings/160 Calories/serving and full of fiber! Also a great way to get your veggies! Hope you enjoy!

This stew is delicious and so easy to make. My son loves it and that is amazing, I can rarely get him to eat squash. Except when he was a baby, he loved squash and sweet potatoes. Maybe I fed him too much and he is just overloaded? He he he

It's one of my favorites too! I'm glad he likes it! For a little twist, you can throw in some fresh cilantro (don't chop) and let it cook a few min. with the kale, and then remove it. It gives it a great flavor!
