Eggless Eggnog

I'm so excited that I found this! It looks like a really easy and IBS safe recipe for eggnog! It got great reviews on www.recipezaar.com!

8 cups soy milk
1 3-ounce package vanilla instant pudding
1/2 cup sugar
2 teaspoons vanilla
1/2 teaspoon nutmeg

1. In large bowl, mix pudding with 1 cup soy milk.
2. When pudding is thick, add remaining ingredients, mix very well.
3. Chill.

Yum -- your recipe sounds delicious! A few years back I remember cutting out a recipe for homemade egg nog that simply substituted Egg Beaters for the eggs in the recipe. I would think that if you use soy milk then it would be IBS safe. I'm going to have to try this year!

I eat kosher, so I can't use the pudding mix, I'd like that reciepe mentioned earlier that just replaces the eggs for eggbeaters. thanx Mariam

I would like to try this out but unfortunately I have not been able to find soy milk in any of our super markets. My friend has asked me to try Agha's supermarket and I will certainly go there on Saturday. Jenny

Hi Jenny! I still haven't tried this one. Thanks for reminding me about it, lol. If you don't find any soy milk can you get rice milk, or any kind of dairy-free milk? I bet this would work with any of them. Good luck!

Hi Kree,
Since I was not aware of soy milk, rice milk or egg beaters I really did not look out of them. I am told that soy milk is available at a certain supermarket which I will check on Saturday. I doubt we get rice milk or egg beaters here. Jenny

The most well-known brand name is Jello. This is what it looks like:



Well, that one's banana and you'd be looking for vanilla, but you get the point. I know there are other brands as well, like Royal. You just add milk (or soy milk!) and they become pudding. Do you have anything like that where you are?

Hi Kree,
What we have here is called custard powder with different flavours to which we add milk and cook till it thickens a bit and sets upon cooling. I could use this but I have not been able to find soy milk. Will try other supermarkets. Thanks

I've tried this... for all those who've asked. Eggnog has always been a very favorite of mine, and while this isn't quite the same as the egg/dairy version, it's very good. Much thicker than Silk Nog. I used half plain soy milk and half vanilla soy milk, because that was what I had on hand, and French Vanilla Jello Instant Pudding. Freshly grated nutmeg. Next time I'd probably cut down on the sugar... and perhaps I shouldn't have overloaded with two glasses of it! But it's definitely delicious.
