I found this on the internet and fixed this to be ibs safe. I myself have never had red velvet cake. But though this look good. Let me know if you try it! Happy Holidays! emmasmom ibs-c gas
Vegan Red Velvet Cupcakes Makes about 22 cupcakes
2 cups soy milk 2 teaspoons apple cider vinegar 2 ½ cups all-purpose flour 2 cups sugar 4 tablespoons cocoa powder 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1/3 cup oil 1/3 cup applesauce or pumpkin 2 ounces red food coloring 4 teaspoons vanilla extract
Add vinegar to soy milk, and set aside to curdle. Sift flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Add vegetable oil, and fruit puree food coloring, and vanilla extract to the curdled soy milk, and mix. Pour liquid ingredients into the dry ingredients, and mix. Fill cupcake liners ¾ full. Bake in a preheated 350° oven for 20 minutes or until done.

My very sweet niece made these for me for Christmas! She also made buttercream frosting (From the red velevet cake recipe). They are delicious!! Thanks for sharing the recipe.
Buttercream Frosting 3/4 cup fat-free milk soy or rice 3/4 cup all-purpose flour 1/2 cup butter, softened margarine 2 teaspoons vanilla extract 1/8 teaspoon salt 2 1/2 cups powdered sugar
To prepare frosting, combine milk and all-purpose flour in a small, heavy saucepan over medium heat. Cook 3 minutes or until mixture forms a very thick paste, stirring constantly with a whisk. Spoon into a bowl; cover surface with plastic wrap. Refrigerate 45 minutes or until chilled. Place butter in a medium bowl, and beat with a mixer at medium speed until creamy. Add 2 teaspoons vanilla, 1/8 teaspoon salt, and chilled flour mixture; beat until smooth. Gradually add powdered sugar, beating just until blended (do not overbeat).
