OK forgive my ignorance of all things corn but is corn starch and corn flour the same thing? Also is corn meal the gritty stuff? Can I use all three interchangably?

Corn starch is very starchy and usually used as more of a binder/thickener - such as in gravy. Corn meal is the gritty stuff used to make corn bread, polenta, etc. These two cannot be used interchangeably.

I'm not positive what corn flour is, but my guess would be really finely ground corn meal. Sorry I can't help much there!
