Hi its suppose to be really cold the next few days here and I would love some crockpot ideas They only ones I have made was krees crockpot chicken stew and sunday chicken super I have looked in the recipe index and theres at least 1 ingrident in most of them that I can't do like beans or can tomatoes. (can do fresh to chicken to try the can ones. Tomatoe sauce is a triger for me.) Any new ideas or suggestions would be great thanks.

I absolutely love Crockpot Bourbon Breast of Chicken. It calls for canned tomatoes but I would think you could use fresh with no problem. It's delicious and the whole house smells wonderful when it's cooking. If you don't usually keep bourbon around you can buy one of those little airplane-size bottles at the liquor store to try the recipe. If you love the recipe as much as I do, you'll soon be investing in the 1.5 liter bottle so you can make it often.

You might also take a look at Kree's Italian Chicken and Potatoes. I've never made this but I love my Sicilian Chicken and I would think you could either cook that as Kree's recipe suggests or perhaps do a combo of the two recipes or even make mine in the crockpot and leave out the tomatoes.

And, of course, there are a bunch of crockpot recipes in the Recipe Index - they're listed all over the place and they all start with "Slow Cooker".

HTH. Enjoy Fall!

The alcohol will cook right off. As for the Italian dressing, you can try the herb mix from my Sicilian Chicken instead - leave out the crushed red pepper if you think it will bother you and you can cut down or omit the garlic also. That leaves you with basil, salt, and pepper - I'd think basil would be safe.

I don't know why you can't do canned tomatoes although sometimes stuff is canned with citric acid and maybe that's too acid-y for you?

HTH.

Hi,
I have a chicken soup recipe that I do in the crockpot that is easy, quick (do it on high if you want it done in 4 to 5 hours)and delicious. It is very filling and served with a loaf of bread or biscuits, it can be a one pot dinner. Here's the recipe.
Ingredients:
2 teaspoons of olive oil
one carrot, thinly sliced
one small onion, finely chopped
2 inner stalks of celery, finely diced
2 skinless chicken thighs (boneless), trimmed of fat
3 - 4 cups reduced sodium chicken stock or broth
salt
pepper
one Tbsp chopped parsley
1/2 package of no yolk medium or wide noodles

Heat two teaspoons of olive oil in a skillet. Add a small chopped onion, one diced carrot,a small amount of diced celery, and saute the vegetables until softened, about 10 minutes. Place onion carrot, celery mixture in the crockpot. Add to the crock pot two boneless chicken thighs trimmed of all visible fat.

Add 3 or 4 cups of reduced sodium chicken stock. Throw in fresh parsley, salt and pepper. Turn the crockpot on low if you want it ready in 7 or 8 hours or on high if you want it ready in 4 or five hours. It is done when the chicken is nice and tender.

Boil 1/2 package of no yolk noodles according to package directions. Drain and place in a plastic bag and put in the fridge. When ready to serve the soup, take out the noodles, heat up the soup and add the noodles. Serve with grated parmesan cheese or soy parmesan cheese.

This soup is so flavorful and delicious that I have made it several times since I found the recipe in my Turn Around cookbook.
