Potato flour?

Can anyone give me ideas what to make with potato flour? I'm asking because my daughter (8 yrs.old) has been following Heather's diet for a couple of months now-(much success!) except for the fact that she's missing a few vitamins and minerals. One is potassium, which can be quite serious. A great source of potassium is potato flour, but I am not a cook. I've learned a lot in the last few months having to cook for her, but I don't know what to do with potato flour! Any one know?

Tara,

You can use potato flour in any recipe you'd use regular flour. You may have to adjust other wet ingredients to get the right consistancy. I have used it in cookies and muffins and rolls/breads. I usually use rice and rye flour.
