Yummy Banana Polenta Cake

I made this last night and it was pretty tasty - I'm actually eating it for breakfast right now! Enjoy!

1 1/4 cups flour
1 cup polenta cornmeal
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 egg whites or vegan egg replacer for 3 eggs
1/4 cup canola oil (you could probably use applesauce to make this even lower-fat)
1 3/4 cups brown sugar (I used sucanat)
4 very ripe bananas, mashed
1/3 cup non-dairy milk of choice
2 tsp vanilla extract

Preheat oven to 350. Lightly spray a 10x13" baking pan with non-stick spray.

In a mixing bowl, whisk together dry ingredients.

In a larger bowl, beat the egg whites. Add oil and beat to combine. Add sugar and beat until smooth. Add in banana puree, milk, and vanilla, and beat again.

Add the dry ingredients to the wet and beat to combine.

Pour batter into prepared pan and bake for about 30 minutes, or until lightly brown at the edges and a toothpick inserted into the center comes out clean.
