This recipe comes from my best friend's mom, who has made this amazing bread for years. Because it's so good and makes small loaves, she gave it often as gifts - and it was always quickly devoured in our house! It is heavenly!

However, it needs a little adaptation if I want to eat it safely now.

Can anyone tell me whether poppyseeds are okay? The bread would be fine without it (it's a little similar to Heather's Lemon Bread). What about the orange juice in the glaze?

Orange Glazed Poppyseed Bread
3 cups flour
2 1/2 cups sugar
1 1/2 cups milk (sub soy/rice/almond milk)
1 cup plus 2 T. canola oil (sub 1/2 cup applesauce, 1/2 cup plus 2 T. canola oil - or is the amount okay?)
1 tsp salt
1 1/2 tsp baking powder
1 1/2 tsp poppy seeds (omit?)
3 eggs (6 whites or 3/4 cup egg sub)
1 1/2 tsp vanilla extract
1 1/2 tsp almond extract

Mix dry and wet ingredients in separate bowls. Make a well in the dry ingredients and pour in the wet ingredients. Beat 2 minutes with electric mixer at medium speed. Pour into greased pans (three 8" x 4" or six 5 3/4" x 3" loaf pans).

Bake at 350 degrees for 40-50 minutes or until a toothpick comes out clean.

GLAZE
3/4 cup sugar
1/4 cup orange juice (is this safe?)
1/2 tsp. vanilla
1/2 tsp. almond extract
2 Tbsp margarine, melted (use safe margarine)

Combine glaze ingredients. Brush glaze generously on loaves while still hot. Cool well before removing bread from pans. The cool glaze will crystallize into a crunchy and sugary top - yum!

Can't wait to hear your thoughts on this....

I think your substitutions look fine. 1/2 cup plus 2 T oil would be a lot for a recipe that only makes one loaf, but this one makes 3, so I think you're fine. Orange juice can be problematic to drink because it is so acidic, but a small amount mixed with SF (the bread) should be totally safe unless you have wicked GERD or something. The seeds should be fine, again, because it's a small amt mixed with SF.

Looks tasty! Enjoy!
