Latkes(potato pancakes)

2 carrots 2 parsnips
1 lg potato 1/4c flour
2 egg whites cooking spray
preheat skillet
Grate carrots parsnips and potatos
squeeze drain
Stir in flour salt and pepper and eggs
Shape into patty and cook til golden brown

We serve this with sour cream. Haven't tried any alternatives yet but even without these are tasty.
The original recipe calls for oil in the pan but I don't use it.The get really nice andd toasty but too much oil.

Sounds yummy. I've also heard of serving potato pancakes with applesauce which would be a nice IBS-safe condiment.
