Blueberry icecream

Hey all I wanted to make this but I have a question about a substitution:

Blueberry Ice Cream
Step 1
4 cups blueberries
1 cup sugar
1/3 cup water
Combine the above ingredients in a saucepan and boil for 5 minutes, then puree.
Step 2
2 cups heavy cream
1 tablespoon lemon juice
Add these ingredients after step one is completed.
Mix together and strain
Follow directions on icecream maker

Heavy Cream: Can I substitute it for Soy milk?? Or should I use a Soy Creamer? When I was looking at non-dairy creamers I saw that they had sodium caseinate- a milk derivative- I thought we couldnt have that?? Thanks for your help!!!

Silk Soy Creamer is vegan. I'd try that first. GOod luck!

Thank you! I actually found Silk Soy Creamer today in the grocery store and it didnt have any milk derivitives in it so I bought it ... when I make the icecream I will let you all know how it is. Blueberry icecream just sounds so refreshing!!

So I made blueberry icecream. It tastes great and very refreshing!! The only problem is that I replaced the heavy cream for silk dairy free creamer and creamer just isnt as thick as heavy cream. So to compensate for that I added like 4 tablespoons of cornstarch... but I dont know if I added it at the right time or what. So it didnt thicken up in the icecream maker so I put it in the freezer in the bowl and now its the right consistancy. I think it tastes pretty good! Not quite like icecream (considering the lack of heavy cream) but hey... close enough! I would definitely give this one a try- I just wonder if there is something else you could use to thicken it up. Ive seen people mention arrowroot and tapioca- I probably shouldve used one of those.
