Oven Fried Chicken to DIE for!!!

My husband LOVES this recipe...and it so so EASY I love to make it for him all the time!!!

Ingredients:
4 skinless, bonlesss chicken breasts
1 bottle low fat Ranch Dressing
1 box Idaho Potato flakes

Preheat oven to 350 degrees.
Pour ranch dressing in a soup sized bowl. Place Idaho potato flakes in a separate bowl. Wash and dry chicken breasts. Dredge chicken breasts in Ranch dressing, then press and roll the chicken breasts in potato flakes until well covered.
Carefully lay chicken breasts in a 9x13in pan sprayed with olive oil. Sprinkle chicken with salt.
Bake at 350 degrees for 35minutes.

Enjoy!!!!

What ranch dressing are you using? Everyone that I have found in the stores contains dairy.

"R-C, that's how I started out my vegan ranch experiments, too -- I blended a base of silken tofu and kept adding and adding things until I had to throw it away! lol Now I use vegan sour cream and cream cheese; it's certainly more "processed" than I would prefer, but it's easy and he goes crazy and eats entire bags of baby carrots with it.

Blend together 3/4 cup sour cream, 1/2 cup cream cheese, 1 tsp. sugar, 1/2 tsp. salt, and 1/4 tsp. dried dill, and fresh ground black pepper. Add 1/4 cup chopped green onions if you like. Voila!"

If you can't get vegan sc/cc where you live, let me know, I think I have a vegan recipe for ranch, I'm just too lazy to get up and find it right now!!

Ok. Here's a GREAT recipe for Ranch Dressing!!

Awesome Vegan Ranch Dressing

Ingredients:

1/2 cup soy milk (Edensoy vanilla or regular flavour)
1/2 cup soy vegan mayonnaise (Nasoya Nayonaise)
1 teaspoon onion powder
1 teaspoon garlic powder
2 - 3 tablespoon red wine vinegar
1 tablespoon dried or fresh parsley (finely chopped)
salt & pepper to taste

Mix all ingredients in a food processor and blend.

Ok, girls...I got it!!
I was at Whole Foods yesterday and saw a "Veggie" Ranch Dressing. It is really good! (GREAT on baked potatoes!!)
It's called - guess what?! "Veggie-Dressing" and the flavor is Ranch. They make a Thousand Island that is delicious too!!

Oh that just makes me want to cry!! I don't have whole foods any where near me and I miss my ranch dressing so much! Can't make it from soy can't have soy!!!!

Try using rice milk (or almond milk) and a low-fat regular mayo instead of the soy milk and soy mayo. I might go a little lighter on the rice milk because it will be a little thinner than soy milk.

I tried this with Ranch dressing and it was yummy but then I decided to start playing around with other seasonings and found a lot of recipes attempting to duplicate the flavor of Kentucky Fried Chicken. The one that looked best was on KFC Forum so I used his seasonings:

1. 3 tsp Black Pepper
2. 1/2 tsp Paprika (Sweet)
3. 1/2 tsp Garlic
4. 1/4 tsp Cayenne
5. 1/4 tsp Sage
6. 1/4 tsp Onion
7. 1/4 tsp Caraway
8. 1/4 tsp Allspice
9. 1/8 tsp Tarragon
10. 1/8 tsp Marjoram
11. 1/8 tsp Rosemary

Plus:

4.5 tsp Salt

(He also used 1/4 teaspoon of sugar which I forgot to add).

I mixed all these ingredients together then made my own "dressing" by combining 1/3 cup of reduced fat mayo with rice milk - start with 1/8 cup rice milk and whisk together. If it's too thick, add a little more rice milk. Then whisk in 1/2 Tablespoon of the KFC flavoring mix.

I also added 1/2 Tablespoon of the KFC flavoring mix to the potato mix. (I used a cup to a cup and a half of Betty Crocker Potato Buds.)

I also dredged the chicken in about 1/2 cup of flour mixed with 1/2 Tablespoon of the KFC flavoring mix before dipping in the "dressing". So the chicken went into flour, then dressing, then potato buds. (I made 2 pretty large breasts with these quantities.)

This was very good. It didn't taste just like KFC, of course, but the flavorings were yummy. Next time I think I'll spray the chicken with a little Pam before popping it in the oven in order to get more browning on the potato buds.

Okay, you caught me and I'm going to have to 'fess up: I used real Rach dressing. Bad, bad, naughty, naughty, but I had some in the fridge and I really wanted to try this chicken. I promise not to do it again.

The first time I served this with my variation on Crispy Potato Wedges. I make them with a little olive oil and garlic salt.

The second time I served this with Baked Lyonnaise Tatoes - I love these things.

Right after I had my gall bladder out, my surgeon recommended no more than 12 grams of fat per day . . . I devised a similar recipe:
Nearly low fat Honey-Mustard chicken nuggets!!!
3 boneless skinless chicken breasts, trimmed of all fat & cubed
2 tsp skim milk (now I would try almond milk)
3 tsp dijonnaise (or similar)
2 tsp honey
1 c. plain bread cumbs
Garlic powder, onion powder, fresh ground pepper & salt to taste

Mix the wet ingredients in a lidded container. Add Chicken. Shake vigorously. leave to marinate for 30 to 40 minutes, minimum.

Blend dry ingredients on a plate.

Spray a non-stick baking sheet w/ cooking spray.

Dredge chicken through crumb mixture and bake at 300 til done.
