IBS friendly chocolate cupcakes

I've been reading the recipes forum for a while and never posted anything, so I thought I should contribute! I cook a lot and love it, so it's fun to read all these recipes. This is a recipe for yummy chocolate cupcakes that are very chocolaty, but safe! and low fat! They are very quick and easy to make too. You can leave out the chocolate chips if you like, and they are just as good.
1 1/2 c. flour 1/2 c. sugar 1/4 c. unsweetened cocoa powder 1 tsp. baking soda 1/2 tsp. salt 1/3 c. water 1/2 c. orange juice 3 T. canola oil 1 T. vinegar 1 tsp. vanilla 1/3 c. mini chocolate chips (optional)
Sift flour, sugar, cocoa, baking soda and salt into a medium bowl. Combine water, orange juice, oil, vinegar and vanilla in a separate bowl. Add liquid ingredients to bowl with dry ingredients and stir until just moist. Fold in chocolate chips if desired.
Spoon into paper-lined muffin pan (12 cupcakes). Bake at 375 degrees for 12 minutes. Remove from pan immediately and cool.
155 calories each (with the chocolate chips), 4 grams fat

You can't taste the orange juice at all. It's just in there for acidity to mix with baking powder so they will rise - since there are no eggs!

Can you omit the OJ, and use egg whites instead?? I have a VERY sensitive stomach, so have to watch out for anything that may give me heartburn...

I have the same problem and believe me there isn't enough orange juice to bother us! It gets divided among 12 cupcakes and you can't tell it's in there. As far as using egg whites instead, I haven't done that so I don't know if it would work or not in this recipe. It is built around using egg alternatives . Heather had a recipe in her newsletter a couple months back for chocolate Mocha Cake and you could leave out the 'mocha' part - you could try making cupcakes with that recipe instead if you really didn't want to try the OJ, but I think you'll be fine! I can't drink OJ at all and it doesn't bother me - in fact I can't really drink any fruit juice too well.
